A team of UNB and St. FX Chefs consisting of Leanne English, Executive Chef, University of New Brunswick, Mike Pollock, Executive Chef, St. Francis Xavier University, John Stewart, Chef, University of New Brunswick, and Cindy McCoy, Catering Director, University of New Brunswick came away victorious at the Canadian College and University Food Service Association (CCUFSA) Culinary Competition in Toronto.
The Sodexo team was awarded the Judge’s Choice Award (best overall award), People’s Choice Award and the Best Dessert Award at the competition.
Each team at the culinary competition; team Sodexo, team Aramark and team Compass, were asked to prepare a cold appetizer, an entree and a dessert using certain designated products. Sodexo’s award winning menu consisted of:
Citrus Cured Atlantic Salmon with Pickled Cucumber and Beetroot Caviar
Seared Scallop with Minted Fiddlehead & Pea Puree and Bacon Coffee Jam.
Maple Marinated Twice Cooked Pork Belly with Rhubarb Compote.
Parmesan Crusted Lamb with Pearl Barley Risotto and Smokey Tomato Creme.
Olive Oil Cake accompanied by Kit Kat Crusted Strawberry Semifreddo, Fruit Coral, White Chocolate Cloud and a Maple Sea Salted Rolo Reduction.
